Strawberry Thumbprint Cookies
My beloved little sister came up with this special recipe. It is so amazing! I cannot get enough of these sweet cookies. They literally taste like melt in your mouth sugar cookies. Everyone in my family loves them, and I'm sure you guys will too! They are gluten free {with the exception of the oats depending on your allergies}, sugar free, and vegan. Enjoy!
Prep Time: 15 min. Cook time: 13-14 min. Fridge time: 30 min. Total time: almost 60 min.
Serves: 10
Tools: Fork, small bowl, blender, sauce pan
Ingredients:
Dough:
1 1/2 cup of Ground oats {oat flour} {ensure gluten free if needed}
1/2 Banana
1/2 tsp. Vanilla
3 T. Maple syrup
1/3 cup of Coconut oil, in solid form
1/2 tsp. Baking powder
Jam:
1/2 cup of Strawberries
1 T. Maple syrup
1 T. Water
1 T. Chia seeds
Instructions:
1. Preheat the oven to 375 degrees Fahrenheit.
2. Put coconut oil in a bowl with ONLY 1 cup of the ground oats.
3. Add the rest of the ingredients and mash together.
4. Finally, add the other 1/2 cup of ground oats and mix well.
5. Place it in the fridge for 1/2 an hour.
6. While in the fridge, heat strawberries and other jam ingredients until soft.
7. Blend the jam in the blender until pureed and place in the fridge.
8. Take the cookies out and roll into 10 balls.
9. Use your thumb to press an indent into the center of each ball.
10. Place the jam in the center and bake on a tray for 13 minutes. Let cool and enjoy!
